Today, I’m conflicted.
On one hand, Oscar Wilde tells me to never allow anyone to treat me like I am ordinary.
But on the other, society tells me that liking pumpkins, and pumpkin flavored things, renders me ordinary. Or more accurately, renders me basic.
But Oscar, I love pumpkins. Even if they render me the pinnacle Autumn loving 20-something girl.
Clearly, this pressing dilemma takes precedence to any and all school work. And so fear not, because if you can relate, allow this week’s culinary adventure to guide you along the pumpkin paved road from ordinary to extraordinary.
Basic girls like basic pumpkin, therefore, exceptional girls must love exceptional pumpkin. So this week, I went above and beyond the casual fall hum-drum with the unbelievable ginger apple + carrot + spiced pumpkin soup.
WHAT YOU NEED:
- chopped carrots
- canned pumpkin
- diced apples
- low sodium vegetable broth
- minced garlic
MAKE IT DELICIOUS:
- Combine 2 cups of vegetable broth + carrots + apples in a large pot. Bring to a boil.
- Add ginger + nutmeg + garlic + pepper. Simmer for 15-20 minutes.
- Add pumpkin and continue simmer for 10-12 minutes.
- Remove from heat + blend in a food processor.
- Serve immediately + nom
My Instagram post of this tummy warming + crazy delicious meal prompted a girl to comment, and I quote, “basic.”
And well, I don’t know who you are, but I think even Oscar would agree, take this amazingly fall-filled meal as proof that if liking pumpkins makes me basic, sign me up.
Hell, I’ll be the mayor of BasicVille if it means I get to perpetually eat warm and delicious apples + carrots + pumpkins. Soup, there it is.
