cucina di molly: sweet potato + quinoa harvest brunch skillet

Some days are good. Some days are bad.

Some days are filled with the ambition to conquer the world, some days with the indifference to just muddle through.

And some days, I buy impromptu plane tickets and skip class to make brunch.

And if this morning’s culinary adventure is any indicator, those are the best days.

Need affirmation? Look no further than the overflowing autumn eruption that is the sweet potato + quinoa harvest brunch skillet.

  • quinoa
  • sweet potato
  • kale
  • broccoli
  • juice from an orange/zest
  • cinnamon
  • nutmeg
  • rosemary


  1. Add 1/2 cup quinoa + 1 cup water + chopped sweet potato to a pan. Bring to a boil.
  2. Add cinnamon + nutmeg + rosemary and simmer covered for 8-10 minutes, stirring occasionally.
  3. Add broccoli + kale + orange and simmer for another 3-4 minutes
  4. Add fried egg
  5. Nom

Allow me to be clear, I am generally not one to opt out of class without a substantial reason. But nothing quite distracts from the guilt of academic neglect like a giant bowl of sweet potato + kale + quinoa.

They say the road to hell is paved with good intentions. And even though I intended to go to class, for me, the road to heaven is paved with egg yolk. Beautiful, runny egg yolk.

And that just sounds (and tastes) a lot better.
