This is going to be a bold claim for a Monday afternoon, so brace yourself.
Life is a lot like a…pumpkin spice latte.
Now, before you spitefully condemn my blog in contempt at such a radical statement, hear me out. I promise the argument holds water — or coffee, delicious + warm pumpkin spiced coffee.
The metaphorical incite came to me on my morning run. I passed by two Starbucks — each absolutely not trying to hide the fact that fall is here and insisting we may now rejoice after the painful and dark period we endured waiting for the PSL to return.
And it was then I realized how often we do this. How often we wait. We wait for Friday. We wait for Summer. We wait for Pumpkin Spice Lattes (worth it). But what is wrong with adding a little spice to any old day? Like today?
So returning from my run I decided to do just that. I added a little spice — pumpkin spice, that is — to a mediocre Monday and the result was nothing short of incredible.
Goldilocks better step aside, because this pumpkin spice oatmeal…way more than just right.
WHAT YOU NEED:
- canned pumpkin
- steel cut oats
- pumpkin seeds
MAKE IT DELICIOUS:
- Bring 1 cup water + 1/2 cup oats to a boil, turn to simmer and cook covered for 5-8 mins.
- Add a few scoops of pumpkin + cinnamon + all-spice and cook for 2-3 mins.
- Scoop it out + top it off with pumpkin seeds + walnuts + honey
Basically this meal was everything wonderful about Fall warmed up in an unbelievable bowl of pumpkin spiced heaven. And on my walk to class I couldn’t help but smile at the fact that the greatest lesson I’d learn today actually came from a seasonal drink at Starbucks.
Today is also National Coffee Day, apparently. A holiday that honestly carries no weight because I joyfully celebrate this beloved drink every day. But nonetheless, I took an extra minute to appreciate the the fresh brewed warm + dark flavor with Lucky Market‘s cinnamon hazelnut blend. You couldn’t pay me to complain right now.
And after an incredible weekend in Cleveland at Shaking with Laughter with the greatest friends on the planet, returning to the mundane weekly routine is never easy. But who’s to say the “weekend spice” that makes the Fri-Sun hours more exciting can’t be sprinkled on the weekdays as well?
Perhaps you’re still not on board with the PSL/life metaphor, but I promise one bite of this oatmeal will have you waving the pumpkin spiced flag.
So here’s to you, Monday. Trying my best to make you as cool (and delicious) as the weekend. One giant bowl of oatmeal at a time.
