cucina di molly: roasted squash + kale + pomegranate pizza

“Whenever you are confronted with an opponent, conquer him with love.”

Well, based on my pure and unadulterated affair with ice cream + carrots + burgers + wine…oh and Chris — I’d have to agree with the great Mahatma Ghandi on that one. Love is a pretty powerful thing.

And sure, love can move mountains. Love can change the world. But if I’m being completely honest, if faced with an adversary, I would choose a slightly different weapon. A weapon no man can resist.


Seriously. Combine cheese + dough + killer toppings — forget about it. Even the strongest man on earth would fall to his knees in deliciously cheese covered submission.

And now more than ever, my belief in this wonderfully tasty conflict solving agent has never been stronger. Because this week, and I’m sure you could agree, my opponent was stress. And while any old pie would have done the trick in easing my worries, life is entirely too short to eat plain.

So I got creative. Real creative. And
the result? A delicious love + pizza explosion that would make any challenger willingly wave the white flag.

My friends and my enemies alike, I present the roasted squash + kale + pomegranate pizza.

  • butternut squash
  • kale
  • pomegranate
  • whole grain flat bread
  • goat cheese
  • olive oil
  • cinnamon

  1. Cube butternut squash. Drizzle with olive oil + cinnamon. Bake at 400 degrees for 30 mins
  2. Saute kale in olive oil over medium heat
  3. Drizzle flat bread with olive oil
  4. Add sauteed kale + butternut squash to flat bread. Add goat cheese. Bake at 300 for an additional 8-10 minutes
  5. Add pomegranate seeds
  6. Nom

So what have we learned here? Well, after the quick 15 minutes it took me to devour this beautiful pie, I felt absolutely invincible against each and every challenge thrown my way.

Now, I’m no scientist, but based on these results, I therefore conclude pizza to be the sole implement to solving any and all world crises.
