If you make a mess, clean it up.
Perhaps the most fundamental of childhood lessons right? And while this golden rule does apply to Legos during recess, its value has easily transcended into my adult life. Particularly when it comes to food and being healthy.
This past weekend (with no regrets, mind you) I made a dietary mess. A beautiful, hot dog + ice cream covered mess.
Would I go back and savor each bite again? Damn right I would. But nonetheless, I knew this week demanded an essential return to clean eating.
Cue the sad violins, right?
In fact, I began the week thrilled to return to the kitchen for some healthy (+DELISH) detox meals. And with my visit to the Chobani store last week still delightfully haunting me, I was inspired me to create this crazy + flavor packed dinner — the greek chicken burger.
WHAT YOU NEED:
- ground chicken
- chopped red onion
- chopped mint leaves
- garlic powder
- plain greek yogurt
- lemon juice
- whole grain buns
MAKE IT DELICIOUS:
- In a large bowl — add chicken + lemon juice + mint + onion + garlic powder. Mix it up.
- Form patties + cook on medium heat for 4-6 mins on each side or until fully cooked
- In a small bowl — combine greek yogurt + lemon juice + mint
- Add a burger to a bun, drizzle some lemon yogurt dressing + spinach
Okay…I know what you’re thinking. But, cleaning up doesn’t mean throwing everything away, right? Besides, it’d be more messy of me to NOT drink wine on a Wednesday.
Aside: note the brand here–told you I was back in college.
As a kid, I’d do just about anything to avoid cleaning up the mess I’d made. I was an only child, okay? It’s not like there was another kid around to pay, or blame it on.
But if cleaning up as an adult means eating unbelievable meals like this — yeah, that doesn’t seem so bad.
Et tu, Greek Chicken Burger? Et tu.
