cucina di molly: peanut butter + apple breakfast burger

Life is complicated. But breakfast doesn’t have to be.

This week has been a whirlwind. Between moving  from New York, packing for Columbus, and gearing up for a final year of college, my life has been hardly simple these days.

Thankfully, though, I was gifted a few days at my home in Pittsburgh to regroup, relax and most importantly, run + cook + eat.

And after an early morning rain filled run, I countered my life complications with an AMAZING + ONE-OF-A-KIND breakfast that was just as much fun to make as it was to eat (kidding, definitely more fun to eat)

And the best part? I only needed 4 simple ingredients that you probably have in your kitchen as we speak.

So step aside Sir Issac Newton. Take a seat iPhone. Because this just became the most important apple in history.

THE PEANUT BUTTER APPLE BREAKFAST BURGER

WHAT YOU NEED:

  • medium apple
  • all natural peanut butter
  • blueberries
  • bananas

MAKE IT DELICIOUS:

  1. Slice apple 3-4 times horizontally
  2. Remove seeds + core from slices
  3. Layer with peanut butter and your desired fruit fillings
  4. Nom

Perhaps you’re curious how to go about eating this.

Well, not like a lady, that’s for sure. Be prepared for the delicious peanut butter evidence of this perfect meal to remain all over your face. But hey, life’s better a little messy, right?

I used all natural + delicious Honey Vanilla Bourbon Peanut Butter from A Loving Spoon which was nothing short of incredible, but the beauty of this meal lies in its creativity. Try it with almond + peanut + sunflower butter. Layer with berries + granola + dried fruit. Truly the sky’s the limit here — go nuts. Apples + nuts.

So what can we learn here? Simple does not mean boring. Just ask my mom — she’ll tell you the borderline embarrassing joy I experienced creating, photographing  and eating this sweet + nutty breakfast burger.

The most important moral of these story, though, is that when life gets complicated, just add peanut butter.

Lots and lots of peanut butter.

Run far, eat well, drink better.
