cucina di molly: four ingredient banana pancakes

Plato was pretty smart, and Einstein had some good ideas, but in my honest opinion there is one man who reigns as the wisest….the one and only, Sir Jack Johnson.

And when I woke to pouring rain, all I could think were Jack’s brilliant words: Can’t you see that it’s just raining? There ain’t no need to go outside.

And so how else would I start a dreary Manhattan morning off than by making a tall stack of DELISH [+ HEALTHY] four ingredient banana pancakes.

  • 1-2 ripe bananas
  • 1 egg
  • 1 tbsp. baking powder
  • cinnamon

  1. In a small bowl, mash the bananas. You can use a blender, but I used my hands and let’s face it, that’s just more fun.
  2. In a large bowl combine mashed bananas + egg + baking powder + cinnamon — mix well
  3. Spoon a glob onto a hot pan + cook for 2-4 mins on each side
  4. Top it with fresh bananas + honey + cinnamon
  5. NOM

If forced to choose between wine + coffee, chances are I would just take myself out. Truly could not survive without either — needless to say pregnancy is gonna be rough.

As it’s one of the few liquids I consume, I am not afraid to admit that I am a coffee snob. When you drink it black, you have to be. And there are a few things I believe are worth paying a little more for, and good coffee is one of them. Honestly, life is way too short to start the day with bad coffee.

Despite their simplistic nature, believe me when I say these pancakes are BOMB. And the topping combinations are endless so go nuts (seriously, imagine walnuts on those bad boys?)

What a lovely rainy morning. Pretendin like it’s the weekend now…

Run far, eat well, drink better.
